Though Chesapeake cuisine is mostly known for its iconic native species like blue crabs, oysters, and rockfish, local chefs are now touting the blue catfish, a tasty, meaty, but unwelcome invasive species threatening to upset the delicate ecological balance of the Chesapeake watershed. It's a win-win for environmentalists and foodies alike!
